Healthy Pistachio Oat Bites - No Refined Sugar - Vegan

Oh-so-delicious Healthy Vegan Oat Cakes! Who needs junk food when you can make something as mouth-watering as these crumbly soft centered oat bites. To make things even better they’re topped with cocao ‘icing’ and I’ve made sure that there are no refined sugars in them – talk about a dream healthy sweet snack!! The result? oat bites can be eaten on the go and fill you up while topping up your energy levels.
16 amazing oat bites
200g Oats (large/jumbo porridge oats)
60g Borna Natural Kernels
4 tbsp Desiccated coconut
3 tbsp Coconut oil (in liquid form)
3 tbsp Agave
3 tbsp Borna Smooth 100% Pistachio butter
4 tbsp almond milk
4 tbsp Cocao
2 tbsp Agave Syrup
2 tsp Coconut oil (in liquid form)
♥ Firstly, preheat the oven to 170°C
♥ Blend the oats, natural kernels, dates and desiccated coconut together until evenly combined. Be careful you don’t blend it too much as you still want the oats to be a little chunky otherwise they’ll turn into a flour consistency. Transfer the mixture to a mixing bowl.
♥ Add the coconut oil, agave, pistachio butter and almond milk into with the dry ingredients while stirring with a wooden spoon. Mix together until evenly distributed.
♥ Line a baking tray with greaseproof paper and grease with coconut oil to stop the oat bites from sticking.
♥ Now it’s time to get messy!! With clean hands, roll the mixture into ping-pong sized balls and then flatten them into a patty shape, then place it on the baking tray.
♥ Bake for 15 mins.
♥ Meanwhile, whip the cocao, agave and coconut oil together. You’ll need to use a little elbow grease and whip-fast to help the ingredients mix together. It may seem like they aren’t going to combine but just keep whipping!
♥ Once the oat bites have finished baking, transfer them to a cooling rack. Leave to cool for 10 mins.
♥ With a piping bag, or if you don’t have one you can use a spoon, decorate the oat bites with the cocao mixture.
♥ Finally..it’s time to enjoy!
