Cocao Truffles Recipe - No Refined Sugar - Vegan

Dare I say that these cocao truffles are much better than your average box of chocolate?! Yes, they are! They’re the ultimate Indulgent and will kick your chocolate craving in the butt. To make things even better they’re 100% vegan, so they’re super-duper guilt-free! Take to a movie night or on a picnic, just make sure you keep them cool.
Makes 16 Truffles
2 Dates (pitted and roughly chopped)
1tbsp Coconut Oil
1tbsp Agave Syrup
1tbsp 100% Pure Smooth Pistachio Butter
3tbsp Cocao powder
♥ Blend the cashews in a food processor until they’ve ground down into small pieces.
♥ Add the dates, coconut oil, agave syrup, pistachio butter and 1 tbsp cocao powder in with the cashews and blend until everything is fully combined
♥ Place a sheet of greaseproof paper on a plate.
♥ Roll the mixture into 16 equal balls, putting them on the greaseproof paper once you’ve rolled each one.
♥ Place in the fridge for 10 mins to firm up.
♥ Spoon the last 2 tbsp of cocao into a bowl, then one by one roll each truffle into the cocao and transferring to a clean Tupperware.
♥ Keep them in the fridge until you want to pamper your taste buds.
