Baked Peaches with Cashew Cream - Pistachios Recipe

You can’t beat having a juicy baked peach on a boiling hot summers day! This recipe has you drizzling agave syrup on the peaches before baking them, which will result in them turning into caramelised slices of enjoy- making them taste like a guilt dessert but from it! Each peach is then topped with a dollop with homemade cashew cream and green peeled kernels…a vegans dessert dream.

Serves 4


4 Peaches (just turning ripe)
4 tsp Agave syrup
25g Raw Cashews
1/4 tsp Vanilla Essence
2 1/2 tbsp Water
20g Green Peeled Borna Pistachio Kernels


♥ Soak the cashews in water for 20 mins

♥ Preheat the oven to 200°C

♥ Line a baking tray with greaseproof paper and grease well with coconut oil

♥ Slice the peaches in half and remove their stones. Place on the baking tray, with the skin facing down and drizzle with agave syrup.

♥ Bake for 10 mins

♥ Meanwhile, drain the cashews and then add to a food processor. Bliz while adding 2 1/2 tbsp water a little at a time. Keep blizzing until completely smooth.

♥ Remove the peaches from the oven. Serve with cashew creme and chopped green peeled pistachios on top.
