Soul Warming Winter Pistachio Soup

It’s national soup month! As we head further into winter we’re all heading towards our comfort foods, and soup is definitely at the top of the list. This recipe is guaranteed to jog your memory as to why soup is good for the soul. This soup is packed full of flavour and will fill you with energy to stop you from falling asleep on the sofa on a Sunday afternoon.

Serves 2


For Soup
60g Borna Green Peeled Kernels
140g Borna Natural Kernels
1 Onion finely diced
20g Salted butter
1 ½ tsp Flour
1 tsp Hot paprika
¼ tsp Ground cumin
120g Roughly chopped spinach
1-litre Vegetable stock

To Serve
5g Natural yoghurt
5g chopped Borna Natural Kernels


♥  Blend the green peeled kernels and natural kernels together until they create a fine powder, then leave to one side

♥ On a low heat, heat the butter in a sautéing pan. Once melted, add the onion and cook until soft

♥ Add spices and flour to the pan and cook on a medium heat for one minute

♥ Add the spinach to the pan and stir until wilted, this shouldn’t take long

♥  Stir in the stock and ground pistachios, bring to boil and then leave to simmer for 10 minutes

♥ Once reduced, either pour into a blender or use a hand blender to blend the soup until completely smooth

♥ Serve with a swirl of natural yoghurt and a sprinkle of chopped pistachios on top of the warm soup
