Pistachio Flapjack Recipe with Sweet Roast Nut Butter

A flapjack is a traditional British snack and usually made with 4 ingredients, oats, butter, golden syrup and sugar. We’ve decided to mix things up a little and add our Sweet Roast Pistachio Butter and switch out golden syrup for maple syrup. Serve with a tea or coffee, pop in your panic basket or munch on while watching a film.

18 Flapjacks


175g Non-dairy butter
90g Golden syrup
90g Sweet Roast Pistachio Butter
175g Brown sugar
280g Porridge oats (Gluten Free if needed)
1/2 lemon, just the zest
30g Natural Pistachio Kernels (chopped)


♥ Preheat the oven to 170°C

♥  Line a baking tin with greaseproof paper and put to one side.

♥  Melt the butter in a saucepan on a low heat, keep a close eye on it as you don’t want it to burn.

♥ Next stir in the maple syrup, sugar and Sweet Roast Pistachio Butter to the melted butter. Stir until the sugar has melted and the pistachio butter is mixed in well.

♥ In a large bowl add the oats, 25g chopped pistachios and lemon zest and slowly stir in the hot butter. Keep stirring until everything is fully coated.

♥  Add the mixture to the lined tin and press it down firmly with a wet spoon (making the spoon wet will stop the oats from sticking to it).

♥  Add the leftover pistachios to the top for decoration and bake for 30mins.

♥  Once baked, take out the oven and chop into 18 pieces, make sure you cut it while it’s hot otherwise you’ll end up with either one big flapjack or a crumbly mess. Let it cool in the tin, then transfer to an airtight container or your mouth…I know which one I’d prefer!
