Egg free pistachio butter banana bread that is moist, light and soft. Yes, you read it right, vegan banana bread doesn’t have to be dry and hard. Thanks for our secret ingredient in this recipe- the Crunchy 100% Pure Pistachio butter, making the loaf extra creamy and moist!

♥ 3 ripe bananas, chopped
♥ 1/2 cup coconut sugar
♥ 1/2 cup vegan butter
♥ 1/2 cup Crunchy 100% Pure Pistachio butter
♥ 1/2 cup plant-based milk
♥ 1/2 cup dried cranberries
♥ 2 tbsp chia seeds
♥ 5 tbsp water
♥ 1 1/2 cups plain flour
♥ 1 tsp baking powder
♥ 1 tsp vanilla extract
1.Preheat the oven to 180 degrees. Line a loaf tin with baking parchment
2.To prepare the chia eggs, add water to chia seeds. Let it sit for 10-15 minutes
3.Slice two bananas into small chunks and sauté with 1/4 of the butter and the coconut sugar for 4-5 minutes until the bananas are soft. Remove from the heat and mash with a fork. Then mix in the remaining butter and Crunchy 100% Pure Pistachio butter
4.Mix the flour and baking powder together into a mixing bowl.
5.Mix plant-based milk, mashed caramelised bananas, and chia eggs together in another mixing bowl.
6.Combine the dry and wet ingredients, mix well and make sure there are no lumps left in the mature. Then add dried cranberry into the mix.
7.Pour the batter into the lined tin. Slice one banana in half and place it on top of the batter.
8.Bake the banana bread for 45-50 mins, or until the toothpick comes out clean.
