LOVE-ly Chocolate & Pistachio Mousse

We all secretly know that food is the best way to spread the love.  This mousse is oh-so-rich and oh-so-amazing that it could replace your valentine…! This recipe makes 2 large portions, you could share one, but valentines day is a day for indulging and treating yourself and your loved one. To really impress then I suggest you serve with a dollop of dairy-free cream and strawberries.

Serves 2


Flesh of 2 large ripe avocados
2 Tsp Cocao powder
4 Tbsp Agave syrup
4tsp Borna 100% Crunchy Pistachio Butter
100g Dark chocolate
2 Tsp Cocao Nibs
2 Tsp Pomegranate
2 Tsp Borna Natural Kernels 


♥ Blend the flesh of both avocados in a food processor until completely smooth.

♥ Scoop the blended avocados into a large bowl and place to one side.

♥ Melt the dark chocolate, be careful not to burn it.

♥ Add the cocoa powder, agave syrup, pistachio butter and melted dark chocolate to the avocado. Mix together well, until all the ingredients are evenly mixed.

♥ Spoon into ramekins and place in the fridge for 20 mins before serving. If you can’t wait that long (like I couldn’t) then place in the freezer for 5 mins. Make sure it’s no longer than 5 mins or it will start to freeze.

♥ Before serving add cocoa nibs, pomegranate and pistachio kernels to the top of each mousse.
