Step aside Hummus, we’ve got a new and improved bean dip recipe for you! With a punch of fresh herbs, a note of nutty pistachio blended into creamy white beans, you will LOVE dipping your veg into this – or, try spreading into your sandwich for and become a lunchtime hero!
♥ 1 can White Butter Beans (reserve 1/4c. liquid!)
♥ 1/2 c. Fresh Parsley, chopped
♥ 1/4 c, Fresh Basil
♥ 1/4 c. Fresh Mint
♥ 2 Tbsp. Olive Oil
♥ Zest of 1 Lemon
♥ Juice of 1 Lemon
♥ 1/4 c. Smooth 100% Pure Pistachio Butter.
♥ 1 clove garlic
♥ Using a blender or food processor, combine all ingredients until smooth and creamy, add additional 1-2 Tbsp olive oil if necessary to fully blend!
♥ Dip your favourite veggies, eat it in a sandwich, or add to pasta for a creamy, protein-rich sauce!
