This vegan pasta dish is perfect when you want to cook up a healthy meal but, simply can’t be bothered to slave away in front of the cooker. Quick yet tasty and healthy…just what everyone wants! There’s only one type of pasta to use for this dish, penne pasta of course! The pistachio pieces end up wedged inside the tubes of pasta, which creates a crunchy surprise.
Take to work cold and impress your colleges or serve fresh from the hob for a quick dinner.
200g Dried brown penne pasta
2 tbsp Borna 100% Crunchy Pistachio Butter
3 tbsp Olive oil
Half a lemon
Salt & pepper
3 sprigs chopped parsley (roughly chopped)
Borna Natural Kernels (roughly chopped)
♥ Cook the pasta in salted water following packet instructions
♥ Meanwhile, mix the pistachio butter, olive oil, and lemon juice together in a bowl
♥ Drain the cooked pasta and then add back to the pan
♥ Add the pistachio dressing to the pasta and stir well
♥ Top with roughly chopped natural kernels and parsley before serving.
