Our vegan roasted pistachio pesto is just like the classic pesto, only better! This healthy and vibrant sauce takes no time to make and prepare, yet can be used in countless dishes, e.g. pasta, salad, dipper.

This recipe is gluten-free and suitable for vegan, who said you need parmesan to make a good pesto?

We recommend using roasted and salted pistachio in this recipe, as it adds a great depth of flavour to this classic twist!

Nutritional Value (per serving- 1/5 cup) |300 Kcal | 27.5g Fat | 8.75g Protein | 3.8g Fibre

Ingredients (For half a cup Roasted Pistachio Pesto):

♥ ½  cup Roasted & Salted Pistachio Kernels
♥ 1 cup Basil
♥ 1 cup Spinach
♥ ⅛  cup parsley
♥ 2 ½  tbsp nutritional yeast
♥ ¼  tsp salt
♥ 1 ½  tbsp minced garlic
♥ 1 tbsp lemon juice
♥ 2 tbsp olive oil
♥ ¼  cup water (add more when needed)

Instructions:

  1. Put all the ingredients in the food processor, blend until smooth.
